The Nebraska-Oklahoma rivalry goes back long before the creation of the Big 12, as you know. It was actually pretty uninteresting for most of the Big 12 years, as Oklahoma was absolutely dreadful for a few years, then Nebraska was mediocre to bad for a while. There were a couple of moments in there though. 

But as Mike pointed out (and as I've said here before), screwing up the NU-OU rivalry was just one of the many sins of the Big 12, and part of the reason why that league is in the sorry state it's in now.
