Some points to ponder:

1.  NU is easier to rhyme with or build into a chant than UN and it rolls 
    off the tongue easier.  

2.  Nebraska has used a 'NU' marching formation since the 1920's,
    I think before the Northwestern band started using one.

3.  The UN is in New York City.
