I feel similar, but overall I'm still pretty focused on this baloney sauce. Is some sort of condiment or an actual sauce made from the renderings in the pan after it is fried (assuming)? The German's have a baloney type sausage called laberkase that is primarily served friend, but aside from mustard I do not remember ever having a sauce. Unless you consider the runny egg yoke when it is prepared similarly to a Hen in a Basket, but instead of bread you use laberkase.
Great more things to research.
Happy holidays.
