I don't think contract law is the key issue, the question is when 
do NCAA guidelines permit schools to send out binding letters of intent,
and can they retract those letters once they've been sent?  

As to oral committments, as Samuel Goldwyn so famously noted they
aren't worth the paper they're printed on.
