Pelini has already coached in an NC game as a co-DC, so he should already know.

Review film.
Meet with his staff.
Meet with his players.
Review strength and nutrition plan.
Plan recruiting activities after dead period.
Build relationship with area HS coaches.
Plan spring practices and scrimmages.
Scout next season's opponents.
Get his contract signed.

Probably a couple more things he could be doing that would make sense
for a first-time, incoming head coach to be doing.
