Yes, there is just one coin toss in overtime. 

***Mike - was this true always or just now? I vaguely remember seeing 
multiple coin tosses in those Arkansas OT games that went forever but 
might be hallucinations*******


A more interesting question would be whether any team has ever chosen
NOT to go on defense when it had the first option. 

****According to my incomplete records (mainly constructed by Dr. Peter 
Rosen, a colleague of mine at Evansville), at least three times.

9/21/2000 - NC State chose offense against GTech (and won)
10/26/2002 - Utah chose offense against New Mexico (and lost)
10/18/2003 - Kent State chose offense against UConn (and lost).

There may be more as our records are a little sketchy before 2000.
