I connected the "Up" wires from *all* the blinds to one relay's NO terminal,
and all the "Down" wires to the NO of a second relay.  The "Common" of each
blind went to the NO terminals of corresponding relays.  The C terminals of
these relays were connected to the C of the other two.

In operation, a blind's relay is activated to "select" it (connecting it's C
to the Up/Down relays), then the Up or Down relay is pulsed.  It's also
possible to use a single relay for the Up/Down functions.

That's true, although I agree the scenario is probably unlikely.  

In my particular installation, the users controlled the shades with Crestron
touchpanels, which can be programmed to give visual or audible notification
that another operation was already in progress.  The same could also be done
with their keypads...
